Food & Nutrition

Our overall goal is to deliver a unique experience that is both challenging and enjoyable, through which students may:

1. Learn the basics of Thai cooking
2. Experience the regional cuisines of Northern (Lanna), North Eastern (Isan), Central (Phak Klang) and Southern Thailand (Phak Tai)
3. Learn about and become captivated by the Thai culture
4. Discover a range of exotic ingredients including fruits, insects, seafood and oriental herbs
5. Understand the importance of balancing flavours and pairing dishes that is known as Sum Rap Thai, ‘The Way Thais Eat’.

Opportunities to fulfil these Aims include

  • A Central Thailand cookery school in Bangkok
  • A Northern Thailand cookery school in Chiang Mai
  • Visiting local markets to buy your ingredients for the cookery schools (and some wonderful curry pastes to take home!)
  • Sampling street foods, including a walking tour of Bangkok’s sois (back streets) and Chinatown
  • Snacking on the magical floating market of Damnoen Saduak
  • Fruit carving school
  • Eating exotic fruits such as rambutan, mangosteen, longan, rose apple, durian, jack fruit and custard apple
  • Braving the market stalls to sample insects such as locusts and roaches
  • And wonderful, tasty Thai food from start to finish!
  • Those completing the Dive Extension may complete a Southern Thailand cookery school in Koh Tao

School groups will follow either the Best of Thailand or the Thailand Adventure programme with the following subject-specific activities on days 3, 4, 8 & 9

Day 3

We will take you to the depths of Chinatown and to Sukhomvit Soi 38, a small alley that is famed for its tasty street food. Here you will find the most amazing noodles, soups, dumplings and broths. Your street food tour is an amazing way to sample new, exotic cuisine and to explore interesting neighbourhoods.

Day 4

Pad Thai

This morning you will visit a local market to buy fresh produce for today’s cookery school. You will prepare 4 or 5 authentic Thai dishes from the Central region of Thailand. Your teacher will first demonstrate the techniques to use and when you have finished your meal, you will sit down to eat your Thai banquet.

Day 8

Thai Cookery School

With its lush and verdant countryside, the Northern Lanna cuisine is dominated by freshly grown herbs. Before today’s Northern cookery course, you will visit the herb gardens to select and pick the herbs that you will use. After cooking a selection of Lanna dishes, you will, once again, feast on your creations.

Day 9

Thai fruit carvings were originally used to decorate the tables of royalty. The skill is now a highly respected art form. At your fruit carving lesson, you will learn the basics of the art and create your own colourful decorations. Afterwards, there should be plenty of time for a traditional Thai massage before dinner!
